Naples is perhaps the seediest of all Italian cities but it’s a city famous for many things including pizza, linguine and clams, spaghetti with garlic and oil and of course the taboo dish known as Puttanesca among many other taboo things. The dark side of this place as in all cities the world has what I would say are “fallen women”. Bluntly stated – puttana is the Italian word for whore, and thus puttanesca means in the style of the whore. Puttana derives from the Latin word pudita, which means stinking.

While this is not the oldest dish in the world it’s based on the oldest profession. It was apparently invented as a “quickie” meal to have between clients. No matter what you think, Puttanesca is delicious in whatever variation and in this one in particular. Chef G.S. Argenti marries the street dish puttanesca with a more modern approach to cooking perfection in sous vide. Using salmon cooked to exactly 119 degrees Chef Argenti shows you how to make the sauce and how to properly cook salmon using sous vide to create culinary perfection in a dish you’ll want to make over and over again.
