Pesto – An Authentic Ligurian Recipe
Ingredients:
For the Pasta:
8 Ounces Fusilli
4 Cups of Water
2 Teaspoons Regular Table Salt
For the Pesto:
1 Ounce of Extra Virgin Olive Oil
3/4 Clove of Garlic (Average Size)
30-40 Basil Leaves
1 Teaspoon Coarse Maldon Salt
4 Ounces Pine Nuts
1 Ounce of Parmigiano Reggiano Cheese (Grated Fine) plus more for finishing the dish.
